Ingredients
  

  • 6 cups finely chopped bok choy 1 large head
  • 1 large apple cored and shredded or chopped
  • 1 large carrot shredded or chopped
  • Dressing:
  • 0.5 cup unsweetened almond, hemp or soy milk
  • 0.25 cup raw cashews or 1/4 cup raw cashew butter
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons raisins
  • 1 teaspoon Dijon mustard

Instructions
 

  • Combine bok choy, apple, and carrot in a large bowl. Blend almond milk, cashews, vinegar, raisins and mustard in a food processor or high-powered blender. Pour dressing over salad and toss to combine.  (Recipe♦125)
