Avocado & Tomato Salsa

If you would like to make a lower carb version of this delicious and flavorful salsa, replace the orange juice with lemon juice.

Ingredients
  

  • 2 avocados chopped and processed with S blade to resemble grain
  • 3 green tomatoes large size, diced
  • 3 red tomatoes large size, diced
  • 1 jalapeno pepper seeded and minced
  • 3 slices fresh ginger minced, use more if desired
  • 0.5 bunch cilantro chopped
  • 1 orange juiced
  • 0.25 cup apple cider vinegar
  • salt to taste

Instructions
 

  • Prepare all the vegetables and herbs as directed and place in a bowl. Drizzle the salsa with orange juice and vinegar, add a pinch of salt and toss. Serve immediately.  (Recipe♦149)
