Breakfast Challenge Scrambled Tofu

Ingredients
  

  • 1 teaspoon coconut oil or enough to coat the pan
  • 2 cups chopped vegetables onion, leeks, peppers, mushrooms, greens, tomato, fresh herbs or whatever you have on hand.
  • 0.75 cup firm or extra firm tofu crumbled
  • 0.5 teaspoon curry powder or turmeric powder
  • salt and pepper to taste
  • other seasonings optional: hot sauce, herbs de Provence, Old Bay

Instructions
 

  • Heat oil in a small pan over medium heat. Add vegetables and saute for 3 mins. Add the tofu, salt and pepper and seasonings of choice. Cook, stirring occasionally for 3 mins until heated through.  (Recipe♦216)
