Carrot Tops Pesto

Servings 1 cup

Ingredients
  

  • 1 bunch tops of very fresh carrots
  • 0.5 cup packed basil leaves
  • 1 clove garlic chopped
  • 0.25 cup raw nuts, such as almonds coarsely chopped
  • 2 ounces goat feta
  • 0.5 cup olive oil
  • salt to taste

Instructions
 

  • Combine the ingredients in a food processor, starting with three tablespoons of olive oil. Process and add olive oil as needed to get the desired consistency. Use as you would any pesto. (Recipe♦244)
