Coconut Basil Chicken

Ingredients
- 2 pounds boneless skinless chicken breast
- 1 can (14 oz) light coconut milk
- 2 cups fresh basil leaves loosely packed
- 1 tablespoon ginger, chopped or more to taste
- 1 jalepeno, chopped or more to taste
- 3 cloves garlic, minced
- 2 limes, juiced
- 1 teaspoon tumeric
- 1 teaspoon cumin
- 1 teaspoon curry powder
- 1 teaspoon salt
- 0.5 teaspoon pepper
- 0.5 teaspoon cinnamon
Instructions
- Add the coconut milk, basil, ginger, jalapeno, garlic, lime juice, turmeric, cumin, curry powder, salt, pepper, and cinnamon to a blender. Blend until combined and set aside.Add the chicken to the slow cooker. Pour the sauce on top. Cook for 4 hours or until chicken is cooked through and tender. (Recipe♦303)
