Coconut Butter Dressing

Coconut Butter Dressing

We served the dressing on a salad of shredded cabbage and red pepper, topped with wedges of avocado.

Ingredients
  

  • 0.5 cup fresh coconut milk or canned lite coconut milk
  • 0.25 cup almond butter
  • 2 tablespoons tamari
  • 1 tablespoon minced fresh ginger
  • 2 limes, juiced
  • 1 orange, juiced
  • 2 dates
  • 0.5 teaspoon cayenne pepper
  • 1 dash salt
  • water as needed for consistency

Instructions
 

  • Blend the ingredients in a processor until creamy.  (Recipe♦305)
