Jicama Salsa

Ingredients
- 2 cups peeled and diced jicama
- 1 red onion small sized, chopped
- 1 red pepper chopped
- 1 cup fresh parsley or cilantro, minced
- 1 orange chopped, or lemon for lower carb option
- olive oil
- white vinegar
- salt and pepper to taste
Instructions
- Peel the orange or lemon and remove as much of the white pith and the membranes between each section as you can, then chop it. Mix with the vegetables and parsley. Toss with the olive oil, vinegar, salt and pepper. (Recipe♦501)
