Mango Salsa

Ingredients
- 2 cups diced mango
- 1 cup diced jicama
- 1 cup cooked black beans drained
- 1 teaspoon finely chopped jalapeno or to taste
- 2 teaspoons fresh mint finely chopped
- 0.5 small red onion finely chopped
- 1 teaspoon fresh lime juice
- salt to taste
Instructions
- In a food processor or blender, puree 1/2 cup of the diced mango until smooth. In a serving bowl combine the remaining diced mango, jicama, beans, jalapeno, mint, onion, lime juice and vinegar. Gently stir in the mango puree. Season with salt. Ideally let stand for 20 minutes before serving. (Recipe #558)
