Mashed Cauliflower

Mashed Cauliflower

Super easy. You just need to steam the cauliflower until very, very soft. Makes a perfect topping for a low-carb Shephard's Pie.

Ingredients
  

  • 1 head of cauliflower either 1 large or 2 smaller heads
  • 2 tablespoons olive oil
  • 4 cloves garlic (optional)
  • 3 carrots white if you can find them
  • 0.5 teaspoon salt and pepper to taste

Instructions
 

  •  Break up the cauliflower into pieces - doesn't have to be too small.Steam the cauliflower pieces in a large pot until very tender.Steaming takes 15-20 minutes, and the carrots may need more, so add them first.Add the garlic and carrots to the pot to steam.Preheat the oven to 350 degrees.Puree the cauliflower in a food processor, use a hand mixer, or simply mash with a potato masher.Add oil, salt and pepper.Reheat in a casserole dish in the oven at 350 degrees for 20 minutes.
