Paleo Almond Chicken Fingers

Ingredients
  

  • 1 pound boneless, skinless chicken breast
  • 1 cup almond meal
  • 1 tablespoon paprika
  • 0.5 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon cayenne pepper
  • 1 teaspoon black pepper
  • 1 teaspoon sea salt
  • 2 eggs lightly beaten
  • olive oil cooking spray

Instructions
 

  • Preheat oven to 375 degrees. Slice chicken breasts into long strips, 1-2 inches wide.Mix together almond meal, paprika, garlic, cumin, cayenne, pepper, and salt.Dredge each piece of chicken in egg and then coat with almond spice mixture. Place pieces on a cookie sheet greased with cooking spray. Bake for 20-25 minutes, until golden.  (Recipe #602)
