Plum Peppermint Salsa

Ingredients
  

  • 10 fresh mint
  • 10 flat-leaf parsley
  • 0.5 red pepper finely chopped
  • 6 plums finely chopped
  • 1 medium tomato chopped
  • 0.5 red onion minced
  • 1 piece of ginger grated
  • 1 lime juiced
  • of olive oil

Instructions
 

  • Remove and chop the leaves from the fresh herbs, and combine with remaining ingredients. This salsa can be served with black beans, eggs or fish dishes.  (Recipe #635)
