Raw Beet, Carrot & Citrus Slaw

In the bleak mid-winter, we often need something to brighten our plates. Fortunately, beets are still in season!

Ingredients
  

  • 3 beets
  • 6 carrots mixed colors are fun, but not necessity
  • 1 parsnip
  • 3 citrus fruits orange, grapefruit, or tangerine, etc
  • citrus vinaigrette *see recipe link below

Instructions
 

  • Peel root vegetables. Using a spiralizer, mandolin, or food processor, finely shred the roots. Peel and segment the citrus fruit. Cut larger segments into bite-sized pieces. Toss roots, citrus, and vinaigrette together. Serve.  (Recipe #691)
