Shredded Beets with Celery and Dates

Ingredients
- 4 beets peeled
- 3 celery stalks chopped
- 0.5 cup pitted dried dates chopped
- 3 tablespoons lemon juice
- 1 tablespoon olive oil
- 0.25 teaspoon sea salt
- 0.25 teaspoon black pepper
- celery leaves for garnish
Instructions
- Mix dates, lemon juice, oil, salt and pepper in a large bowl. Stir in chopped celery.Shred the beets using spiralizer or food processor, and gently stir them into the mixture. Garnish with celery leaves and serve. (Recipe #761)
