Spiralized “Pasta” Alfredo

Ingredients
- 1 bunch lacinato kale thinly sliced
- 1 pinch salt
- 1 olive oil
- 2 zucchinis, spiralized like spaghetti we used a Spirooll
- chopped parsley for garnish
- Dressing:
- 0.75 cup almonds or cashews soaked for a few hours
- 1 lemon juiced
- 1 tablespoon miso paste
- 1 clove garlic
- 0.5 sweet red onion
- 3 tablespoons nutritional yeast
- 2 tablespoons olive oil
- water as needed to process it
Instructions
- Place the shredded kale in a bowl. Add a little salt and olive oil and rub it for a few seconds until the green becomes brilliant. Spiralize the zucchini, making sure to cut the pieces to a manageable length. Mix with the kale. Process the dressing ingredients. It will be very thick, that’s OK. Massage the dressing into the vegetables. Finish with parsley. (Recipe #790)
