Spiralized “Pasta” Alfredo

Ingredients
  

  • 1 bunch lacinato kale thinly sliced
  • 1 pinch salt
  • 1 olive oil
  • 2 zucchinis, spiralized like spaghetti we used a Spirooll
  • chopped parsley for garnish
  • Dressing:
  • 0.75 cup almonds or cashews soaked for a few hours
  • 1 lemon juiced
  • 1 tablespoon miso paste
  • 1 clove garlic
  • 0.5 sweet red onion
  • 3 tablespoons nutritional yeast
  • 2 tablespoons olive oil
  • water as needed to process it

Instructions
 

  • Place the shredded kale in a bowl. Add a little salt and olive oil and rub it for a few seconds until the green becomes brilliant. Spiralize the zucchini, making sure to cut the pieces to a manageable length. Mix with the kale. Process the dressing ingredients. It will be very thick, that’s OK. Massage the dressing into the vegetables. Finish with parsley.  (Recipe #790)
