Turkey Chopped Salad

Servings 6 large servings

Ingredients
  

  • 2 pounds turkey breast cubed
  • 4 cups greens about 1 head Romaine lettuce, arugula, spinach and/or baby greens
  • 3 red peppers chopped
  • 1 fennel bulb thinly sliced
  • 1 red onion small sized
  • 1 fresh ginger 1-inch piece, grated
  • 1 cup edamame or lentil sprouts
  • 1 package goat milk feta crumbled
  • 0.5 cup walnuts or almonds coarsely chopped

Instructions
 

  • Roast turkey breast and let sit to cool enough to handle and chop. Chop or slice greens if needed and add to a large bowl. Prepare the red peppers, fennel, and red onion and add to the greens. Grate the ginger and add to the greens along with the edamame, feta and nuts. Add the cubed turkey. Toss with Dijon and Hot Chili Dressing and serve.  (Recipe #842)
