Vegan Full English Breakfast

Typically the Full English includes Bacon, Black “pudding”, Bangers and Eggs. But the vegan accompaniments are wonderful – with or without the meat.

Ingredients
  

  • grape tomatoes halved
  • 4 cups leafy greens spinach, kale, chard
  • 1 cup leftover roasted vegetables
  • 1 cup cooked lentils
  • 1 cup cooked mushrooms

Instructions
 

  • Heat olive oil in a skillet over medium heat. Saute tomatoes until they start to brown, about 4 minutes. Remove to a plate. Saute the greens for about 4 minutes.  Remove to a plate. Warm the roasted vegetables, mushrooms and lentils, individually or in sections of the same pan.Whole 30 compliant.  (Recipe #865)
