Anne’s Marinated Cucumber Salad

Ingredients
  

  • stevia to taste 10 drops or so
  • 6 tablespoons white balsamic vinegar
  • 4 tablespoons olive oil
  • 1 teaspoon salt
  • 1 English hothouse cucumber sliced
  • 2 carrots peeled and shredded
  • 2 red bell peppers thinly sliced
  • 1 sweet onion thinly sliced

Instructions
 

  • Add stevia, vinegar, oil and salt to a large jar and shake until well mixed. Combine the prepared cucumber, carrots, peppers and onion. Pour dressing mixture over the vegetables. Leave salad (covered) at room temperature for 2 hours, then marinate in the refrigerator overnight. Serve (the next day) and enjoy.   (Recipe♦123)
