Anne’s Marinated Cucumber Salad

Ingredients
- stevia to taste 10 drops or so
- 6 tablespoons white balsamic vinegar
- 4 tablespoons olive oil
- 1 teaspoon salt
- 1 English hothouse cucumber sliced
- 2 carrots peeled and shredded
- 2 red bell peppers thinly sliced
- 1 sweet onion thinly sliced
Instructions
- Add stevia, vinegar, oil and salt to a large jar and shake until well mixed. Combine the prepared cucumber, carrots, peppers and onion. Pour dressing mixture over the vegetables. Leave salad (covered) at room temperature for 2 hours, then marinate in the refrigerator overnight. Serve (the next day) and enjoy. (Recipe♦123)
