Apple Fig Salsa

Ingredients
- 5 apples diced and tossed with lime juice
- 10 Calamyrna figs chopped
- 2 limes juiced
- 2 tablespoons olive oil
- 1 teaspoon cardamom
- 0.5 teaspoon Himalayan salt
Instructions
- Combine the lime juice, olive oil, cardamom and salt in a large bowl. Dice the apples and toss with the lime juice mixture to coat as you work. Add the figs and toss. We served this with very plain roasted chicken for the omnivores and a chickpea curry for the vegetarians. Makes enough salsa for 10 servings. (Recipe♦128)
