Apple Salsa

Ingredients
- 1 cup sliced, roasted almonds
- 1 cup golden raisins
- 1 cup pomegranate seeds
- 5 tart apples Jonathan, Pink Lady, or Stayman-Winesap. Leave skin on
- 0.5 bunch parsley chopped
- lime juice from 1 lime
- 3 tablespoons coconut milk
- 0.25 teaspoon cardamom or to taste
- 0.5 teaspoon cumin or to taste
Instructions
- Chop apples into 1/2 inch pieces. Add chopped parsley, pomegranate seeds, raisins, and almonds. Add lime juice and coconut milk. Sprinkle with cardamom and cumin and combine well. Adjust spices to taste. (Recipe♦130)
