Apple Salsa

Ingredients
  

  • 1 cup sliced, roasted almonds
  • 1 cup golden raisins
  • 1 cup pomegranate seeds
  • 5 tart apples Jonathan, Pink Lady, or Stayman-Winesap. Leave skin on
  • 0.5 bunch parsley chopped
  • lime juice from 1 lime
  • 3 tablespoons coconut milk
  • 0.25 teaspoon cardamom or to taste
  • 0.5 teaspoon cumin or to taste

Instructions
 

  • Chop apples into 1/2 inch pieces. Add chopped parsley, pomegranate seeds, raisins, and almonds. Add lime juice and coconut milk. Sprinkle with cardamom and cumin and combine well. Adjust spices to taste.  (Recipe♦130)
