Asparagus Mushroom Soup

Ingredients
  

  • 2 yellow onions chopped
  • 2 bunches asparagus chopped
  • 1 pound mushrooms chopped
  • olive oil or preferred fat to coat the bottom of the pan
  • 10 cups chicken or vegetable broth
  • hot pepper sauce

Instructions
 

  • Generously coat the bottom of a large pot with olive oil. Over medium heat, add the onion, stirring until a little golden. Add chopped mushrooms and stock, and simmer until mushrooms are soft. Add asparagus and simmer until just done and still bright green. Season with hot sauce to taste.  (Recipe♦142)
