Avocado & Carrot Soup

Ingredients
  

  • 5 avocados
  • 8 carrots coarsely chopped
  • 1 piece of fresh ginger chopped
  • 3 cups water more if needed
  • 2 lemons juiced
  • 0.25 teaspoon cayenne pepper
  • salt and pepper
  • 1 teaspoon curry powder optional

Instructions
 

  • Process all ingredients in a Vitamix or similar high power blender until creamy. (You may have to do this in two batches.) Taste and adjust seasoning. (Recipe♦148)
