Avocado & Carrot Soup

Ingredients
- 5 avocados
- 8 carrots coarsely chopped
- 1 piece of fresh ginger chopped
- 3 cups water more if needed
- 2 lemons juiced
- 0.25 teaspoon cayenne pepper
- salt and pepper
- 1 teaspoon curry powder optional
Instructions
- Process all ingredients in a Vitamix or similar high power blender until creamy. (You may have to do this in two batches.) Taste and adjust seasoning. (Recipe♦148)
