Avocado Chocolate Mousse

Adapted from Oprah magazine

Ingredients
  

  • 2 large avocados pitted
  • 0.5 cup unsweetened cocoa
  • 3 tablespoons honey
  • 5 drops stevia can use up to 10 drops
  • 1 teaspoon vanilla extract
  • 1 teaspoon instant coffee or espresso powder

Instructions
 

  • Pulse all ingredients in a food processor. Pour into a small serving bowl and chill for 30 minutes.
