Avocado, Coconut Milk & Lime Ice Cream

Ingredients
- 1 can full fat coconut milk refrigerated
- 2 avocados peeled and pitted, then cubed and frozen for at least 2 hours
- 0.5 cup lime juice from about 5 limes
- 1 tablespoon lime zest
- 1 tablespoon vanilla extract
- sweetener of choice: 2 tablespoons maple syrup or honey or 2 teaspoons powdered monkfruit or 10 drops liquid stevia
- 0.25 cup water
Instructions
- Place all ingredients into a blender or food processor and blend until smooth. Scrape down the sides a few times to get a smooth texture. Keep in freezer until ready to serve. Best to serve same day as made. (Recipe♦155)
