Avocado Salsa

Ingredients
- 4 avocados diced
- 3 tablespoons lime juice to prevent browning
- 2 cucumbers diced
- 3 teaspoons fresh grated ginger more to taste
- 0.5 bunch parsley or cilantro finely chopped
- salt to taste
- olive oil for drizzling
- honey optional, for drizzling
Instructions
- Dice the avocados and toss with lime juice to prevent browning. Toss with cucumbers, ginger, herb of choice and salt. Add a drizzle of olive oil and a drizzle of honey (or permitted sweetener) if you want a sweet note. (Recipe♦154)
