Avocado & Tomato Salsa
If you would like to make a lower carb version of this delicious and flavorful salsa, replace the orange juice with lemon juice.

Ingredients
- 2 avocados chopped and processed with S blade to resemble grain
- 3 green tomatoes large size, diced
- 3 red tomatoes large size, diced
- 1 jalapeno pepper seeded and minced
- 3 slices fresh ginger minced, use more if desired
- 0.5 bunch cilantro chopped
- 1 orange juiced
- 0.25 cup apple cider vinegar
- salt to taste
Instructions
- Prepare all the vegetables and herbs as directed and place in a bowl. Drizzle the salsa with orange juice and vinegar, add a pinch of salt and toss. Serve immediately. (Recipe♦149)
