Banana Salsa

Ingredients
  

  • 3 large bananas, not too ripe
  • 1 red bell pepper, seeded and diced
  • 1 orange pepper, seeded and diced
  • 1 yellow pepper, seeded and diced
  • 0.25 cup fresh cilantro, chopped
  • 4 green onions, finely chopped
  • 1 lime, juiced
  • 1 lemon. juiced
  • 1 tablespoon coconut crystals or brown sugar
  • 1 tablespoon freshly grated ginger
  • 1 tablespoon olive oil
  • 1 tablespoon habanero pepper, minced or hot sauce, to taste
  • salt to taste

Instructions
 

  • Place the chopped vegetables in a large bowl. Whisk together the juices, coconut crystals, ginger, olive oil, pepper/hot sauce and salt, and toss well. Just before serving, peel and dice the bananas and toss in.  (Recipe♦166)
