Banana Salsa

Ingredients
- 3 large bananas, not too ripe
- 1 red bell pepper, seeded and diced
- 1 orange pepper, seeded and diced
- 1 yellow pepper, seeded and diced
- 0.25 cup fresh cilantro, chopped
- 4 green onions, finely chopped
- 1 lime, juiced
- 1 lemon. juiced
- 1 tablespoon coconut crystals or brown sugar
- 1 tablespoon freshly grated ginger
- 1 tablespoon olive oil
- 1 tablespoon habanero pepper, minced or hot sauce, to taste
- salt to taste
Instructions
- Place the chopped vegetables in a large bowl. Whisk together the juices, coconut crystals, ginger, olive oil, pepper/hot sauce and salt, and toss well. Just before serving, peel and dice the bananas and toss in. (Recipe♦166)
