Beet, Cabbage & Apple Salad

Ingredients
  

  • 1 bunch beets, cleaned and shredded
  • 1 red cabbage, shredded in food processor
  • 4 Granny Smith Apples, chopped
  • 1 lemon, juiced
  • 1 cup chopped walnuts
  • 0.5 cup minced figs

Instructions
 

  • Toast chopped walnuts and set aside to cool slightly.Toss the chopped apples with lemon juice so they don’t oxidize, and set aside. Combine beets and cabbage in a large bowl then add all the other ingredients.Serve with Boiled Cider Dressing and toss well. (Recipe♦181)
