Black Bean & Cabbage Stew

Ingredients
- 2 pounds dried black beans
- 1 head cabbage, sliced thin or shredded in processor
- 2 large onions, chopped
- 2 cups tomato sauce
- 1 cup salsa
- vegetable or chicken broth optional, for consistency
- olive oil for drizzling
- salt to taste
- hot pepper sauce to taste
Instructions
- Cook black beans according to the package directions, minus 20 minutes. Add tomato sauce, salsa, shredded cabbage, and onion. Simmer until vegetables are tender, about 45 minutes. You may need to add water or broth to get the consistency you want. Drizzle in some extra virgin olive oil and add salt and/or hot pepper sauce to taste. (Recipe♦189)
