Black Bean Fiesta Salad (No Corn)

Ingredients
- 1 can black or Spanish beans drained and rinsed
- 1 cup sprouted mung beans
- 1 red pepper finely chopped
- 1 yellow pepper finely chopped
- 0.5 cup red onion chopped
- 1 fresh cilantro chopped
- 1 fresh parsley chopped
- 1 fresh chives chopped
- 3 cloves garlic smashed and diced
- 2 tablespoons olive oil
- 1 lime juiced
- salt to taste
Instructions
- Combine all ingredients together. Can be served with 1-2 tablespoons plain Greek yoghurt. Optional: Add hot sauce to taste.
