Black-eyed Pea (with Ground Turkey) Soup

Ingredients
- olive oil enough to coat pot
- 1 large onion, chopped
- 5 stalks celery, chopped
- 5 carrots, chopped
- 0.5 head cabbage, shredded
- 1 pound ground turkey
- 3 cups cooked or canned black-eyed peas
- 0.5 cup uncooked brown rice
- 1 large can of broth plus same amount of water
- 1 cup salsa with no added sweeteners
Instructions
- Place a large soup pot on medium heat with enough olive oil to coat the bottom. Add onion, celery, carrots and cabbage. Mix in ground turkey and stir until browned. When turkey is cooked, add black-eyed peas, rice, broth, water (to desired consistency) and salsa. Cook until the rice and vegetables are tender, 20 – 30 minutes, and serve. (Recipe♦197)
