Blanched Broccoli Salad

Ingredients
  

  • 1 head broccoli
  • 1 small red onion minced
  • 0.25 cup roasted pumpkin seeds
  • 3 tablespoons olive oil
  • 2 tablespoons white wine vinegar
  • 2 cloves garlic
  • 2 drops stevia
  • salt to taste, if permitted

Instructions
 

  • Boil a pot of water. Plunge the broccoli head in for 30-40 seconds, remove and drain. Chop into bite-sized pieces. Combine with onion and pumpkin seeds. Whisk together the oil, vinegar, garlic, Stevia and salt (optional), and toss with the salad. Chill or serve slightly warm.  (Recipe♦201)
