Blanched Broccoli Salad

Ingredients
- 1 head broccoli
- 1 small red onion minced
- 0.25 cup roasted pumpkin seeds
- 3 tablespoons olive oil
- 2 tablespoons white wine vinegar
- 2 cloves garlic
- 2 drops stevia
- salt to taste, if permitted
Instructions
- Boil a pot of water. Plunge the broccoli head in for 30-40 seconds, remove and drain. Chop into bite-sized pieces. Combine with onion and pumpkin seeds. Whisk together the oil, vinegar, garlic, Stevia and salt (optional), and toss with the salad. Chill or serve slightly warm. (Recipe♦201)
