Brain Chips, Sweet Version

Ingredients
  

  • 1 cup raw walnuts chopped
  • pinch sea salt
  • 0.5 cup coconut oil melted
  • optional additions:
  • 2 tablespoons dark chocolate pieces chopped into small bits
  • 2 tablespoons dried currants or other dried fruit with no sugar added
  • 2 tablespoons roasted, salted sunflower seeds or pepitas
  • 2 tablespoons cacao nibs

Instructions
 

  • Mix nuts with desired additions and spread evenly on a parchment-lined pie plate or baking tray with sides. Sprinkle with salt if desired. Pour melted coconut oil over the mixture.Put the tray in the freezer for an hour. When the mixture has hardened, chop up the brain chips into small pieces. Store them in a jar in the freezer.Add the brain chips to any fruit or fruit whip (half an avocado and half a banana whipped together), or serve over yogurt.  (Recipe♦207)
