Breakfast Challenge Scrambled Eggs or Tofu Scramble

Ingredients
  

  • 1 teaspoon coconut, olive oil or butter or enough to coat the pan
  • 0.5 cup chopped vegetables onion, leeks, peppers, mushrooms, greens, tomato, or whatever you have on hand
  • eggs 2 - 3 as desired or 3/4 cups firm tofu crumbled
  • 1 tablespoon water or milk
  • 1 tablespoon fresh chopped herbs if you have them
  • 1 pinch seasonings of your choice herbs de Provence, chili powder, curry, turmeric, ets.
  • salt and pepper to taste

Instructions
 

  • Heat oil in a small pan over medium heat. Add vegetables and saute for 3 mins. Crack eggs in a bowl. Whisk eggs with water, salt and pepper and pour over eggs. Cook, stirring occasionally for 3 mins until the eggs are firm.  (Recipe♦215)
