Carrot Ginger Pomegranate Salad

Ingredients
- 6 carrots grated
- 1 tablespoon grated fresh ginger
- 1 pomegranate seeded
- 1 bunch fresh parsley chopped
- 1 lime juiced
- 2 tablespoons light vinegar such as coconut or apple cider vinegar
- 0.25 cup olive oil
- salt to taste
- 1 teaspoon honey or agave more if needed
Instructions
- Mix the carrots, ginger, pomegranate seeds and parsley in a salad bowl. In a separate bowl blend or whisk together the remaining ingredients. Combine dressing and carrot mixture. (Recipe♦241)
