Carrot Ginger Pomegranate Salad

Ingredients
  

  • 6 carrots grated
  • 1 tablespoon grated fresh ginger
  • 1 pomegranate seeded
  • 1 bunch fresh parsley chopped
  • 1 lime juiced
  • 2 tablespoons light vinegar such as coconut or apple cider vinegar
  • 0.25 cup olive oil
  • salt to taste
  • 1 teaspoon honey or agave more if needed

Instructions
 

  • Mix the carrots, ginger, pomegranate seeds and parsley in a salad bowl. In a separate bowl blend or whisk together the remaining ingredients. Combine dressing and carrot mixture.  (Recipe♦241)
