Chard & Apple Salad

Chard is a hardy green. We've harvested fall chard from our New Jersey garden as late as January. The hardiness of the chard compliments the tartness of the apple and lemon vinaigrette.

Ingredients
  

  • 2 bunches chard green or rainbow
  • 2 apples chopped into bite-size pieces
  • 4 stalks celery chopped, optional
  • 0.25 cup walnuts or almonds optional
  • 0.25 cup raisins or dried cranberries
  • citrus vinaigrette see recipe link below

Instructions
 

  • Rinse and wash the chard. Strip the chard off the stems and chop the leaves into bite-sized pieces. Finely chop the stems and toss with leaves.Combine all ingedients, toss with vinaigrette and serve. (Recipe♦250)
