Chicken Chili Lime Meatballs

Ingredients
  

  • 1 pound ground chicken
  • 2 tablespoons flax meal
  • 2 tablespoons almond flour or meal
  • 2 scallions finely chopped
  • 0.5 medium red pepper seeded and finely chopped
  • 2 tablespoons chopped cilantro
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 0.5 teaspoon red pepper flakes
  • juice and zest from 1/2 medium lime

Instructions
 

  • Preheat oven to 350°F.                                                                                                                                                                       Combine all ingredients in a large bowl and mix gently until combined.                                                                                                                                                                    Form into balls using a heaping tablespoon of mixture and place on parchment-lined baking sheet. Bake for 18 - 20 minutes or until they reach an internal temperature of 165°F.                                                                                                                                                                                 Serve over simple guacamole.  (Recipe♦258)
