Chicken Chili Lime Meatballs

Ingredients
- 1 pound ground chicken
- 2 tablespoons flax meal
- 2 tablespoons almond flour or meal
- 2 scallions finely chopped
- 0.5 medium red pepper seeded and finely chopped
- 2 tablespoons chopped cilantro
- 0.5 teaspoon garlic powder
- 0.5 teaspoon salt
- 0.5 teaspoon red pepper flakes
- juice and zest from 1/2 medium lime
Instructions
- Preheat oven to 350°F. Combine all ingredients in a large bowl and mix gently until combined. Form into balls using a heaping tablespoon of mixture and place on parchment-lined baking sheet. Bake for 18 - 20 minutes or until they reach an internal temperature of 165°F. Serve over simple guacamole. (Recipe♦258)
