Chicken with Sun Dried Tomatoes & Mushrooms

Ingredients
- 2 pounds chicken cubed
- 1 onion chopped
- 1 pound mushrooms sliced
- 10 sun dried tomatoes soaked in oil, chopped
- 0.333333 cup pine nuts toasted
- 1 cup chicken broth
- 0.5 cup tomato sauce
- 0.5 cup fresh herbs
Instructions
- Sauté chicken in a large frying pan. Add onions, mushrooms and tomatoes. Add broth and tomato sauce. Simmer till vegetables are soft and chicken is cooked through. Add herbs in the last several minutes before serving. (Recipe♦268)
