Chickpea Salad

Ingredients
  

  • 2 cans (25 oz) chickpeas
  • 1 can (25 oz) black beans
  • 2 lemons juiced
  • 0.25 cup olive oil
  • 6 cloves garlic crushed
  • 1 teaspoon salt to taste, if permitted
  • 0.25 teaspoon cayenne pepper
  • 2 large tomatoes diced
  • 1 cup chopped veg of choice optional: cucumber, peppers, radish, jicama, etc
  • 1 bunch fresh cilantro washed, dried and chopped
  • 1 bunch fresh parsley washed, dried and chopped

Instructions
 

  • Drain and rinse beans and chickpeas and set aside. Whisk together lemon juice, olive oil, garlic, salt and cayenne. Add all the ingredients to the dressing. (Recipe♦272)
