Chickpea Salad

Ingredients
- 2 cans (25 oz) chickpeas
- 1 can (25 oz) black beans
- 2 lemons juiced
- 0.25 cup olive oil
- 6 cloves garlic crushed
- 1 teaspoon salt to taste, if permitted
- 0.25 teaspoon cayenne pepper
- 2 large tomatoes diced
- 1 cup chopped veg of choice optional: cucumber, peppers, radish, jicama, etc
- 1 bunch fresh cilantro washed, dried and chopped
- 1 bunch fresh parsley washed, dried and chopped
Instructions
- Drain and rinse beans and chickpeas and set aside. Whisk together lemon juice, olive oil, garlic, salt and cayenne. Add all the ingredients to the dressing. (Recipe♦272)
