Chilled Avocado Cucumber Soup

Servings 8 servings

Ingredients
  

  • 4 limes juiced
  • 4 avocados
  • 2 pounds cucumbers
  • 1 teaspoon salt good quality, like Himalayan
  • 1.5 cups very cold water can use part ice cubes
  • 1 jalapeno pepper chopped
  • 1 tomato chopped
  • 0.5 bunch fresh cilantro chopped fine
  • 0.25 cup minced red onion
  • cracked pepper or hot sauce

Instructions
 

  • In a food processor or high-speed blender, blend the first six ingredients until creamy. Taste and add more salt if desired, then chill. Garnish with chopped tomato, onion and cilantro and a few grindings of black pepper or a drizzle of hot sauce, then serve.  (Recipe♦273)
