Chilled Cucumber & Mango Soup

This recipe calls for frozen mango and cucumber pieces, so you may need to prep a day ahead.
Servings 8 servings

Ingredients
  

  • 2 mangoes cut into chunks and frozen; or one bag frozen mango chunks
  • 3 cucumbers peeled, sliced and frozen
  • 10 mint leaves plus additional sprigs for garnish
  • 2 limes juiced
  • 1 pinch cayenne pepper or dash of hot sauce, enough to taste a little heat
  • 1 pinch salt high quality such as Himalayan or Celtic Sea
  • 1 cup water or enough to make a thick soup

Instructions
 

  • Process all ingredients in a high speed blender, adding just enough water to make a thick soup. Taste and adjust seasoning before serving. You want a refreshing note of mint and a little bite from the cayenne pepper or hot sauce. Garnish with fresh mint sprigs.  (Recipe♦274)
