Chinatown Chicken Salad

Ingredients
- 2 heads of romaine lettuce cleaned and chopped
- 1 bunch kale thinly sliced
- 1 cucumber peeled and chopped
- 1 red pepper thinly sliced
- 1 red onion thinly sliced
- 1 bunch fresh cilantro chopped
- 4 grilled boneless chicken breasts* cut into bite-sized pieces
- 1 cup walnuts coarsely chopped, or a mix of nuts and sunflower seeds
- 4 tablespoons white sesame seeds
Instructions
- Combine all ingredients in a bowl, and toss with Ginger Mustard Dressing. (Recipe♦276)
Notes
*You may substitute the chicken breasts for a whole deli-roasted (rotisserie) chicken.
