Chinatown Chicken Salad

Ingredients
  

  • 2 heads of romaine lettuce cleaned and chopped
  • 1 bunch kale thinly sliced
  • 1 cucumber peeled and chopped
  • 1 red pepper thinly sliced
  • 1 red onion thinly sliced
  • 1 bunch fresh cilantro chopped
  • 4 grilled boneless chicken breasts* cut into bite-sized pieces
  • 1 cup walnuts coarsely chopped, or a mix of nuts and sunflower seeds
  • 4 tablespoons white sesame seeds

Instructions
 

  • Combine all ingredients in a bowl, and toss with Ginger Mustard Dressing.  (Recipe♦276)

Notes

*You may substitute the chicken breasts for a whole deli-roasted (rotisserie) chicken.
