Chopped Chicken Salad

Ingredients
- 4 pounds chicken sautéed in olive oil until just done
- 2 cups almonds chopped
- 1 small jicama chopped
- several cherry tomatoes
- 1 red pepper chopped
- 3 fennel bulbs shredded
- 1 bunch parsley chopped
- 1 bunch kale shredded fine
- 1 fresh herbs if available
Instructions
- Chop or pull apart cooked chicken into bite-sized pieces. Prepare remaining ingredients and combine with chicken in a large serving bowl. Toss salad with Tangy Apple Cider Dressing and serve. (Recipe♦284)
