Ingredients
- 1 head of garlic peeled
- 0.5 bunch cilantro most stems removed, coarsely chopped
- 1 lemon juiced
- 0.25 cup red onion coarsely chopped
- 1 can artichoke hearts drained
Instructions
- Pulse the garlic in the food processor until minced. Add the rest of the ingredients and pulse so you don’t create mush. Add a dollop of this to brighten up soups and stews. Or use it on plain roasted chicken, a vegan bean dish, etc. Having this flavor boost on the side is especially helpful when there are people who love and hate cilantro at the same meeting.
