Citrus Cumin Dressing

Ingredients
- 1 clove garlic, minced
- 3 tablespoons fresh lime juice
- 2 tablespoons fresh orange juice
- 2 tablespoons finely chopped shallot
- 1 tablespoon honey more to taste or substitute stevia for a low-carb version
- 0.75 teaspoon toasted, finely ground cumin seeds
- 0.25 cup extra virgin olive oil
- 0.25 teaspoon Kosher salt more to taste
- fresh ground pepper
Instructions
- Mash the garlic to a paste with the Kosher salt.In a medium bowl, whisk the garlic paste with the lime and orange juices, shallot, honey/stevia, and toasted ground cumin. Slowly add the oil in a thin stream, whisking until well blended. Season to taste with black pepper and more salt and sweetener if you like. (Recipe♦294)
