Claudia’s Raw Corn Soup

Ingredients
- 1 clove garlic
- 0.5 cup chopped red onion
- 2 carrots chopped
- 2 celery stalks chopped
- 3 parsnips chopped
- 0.5 cup chopped jicama
- 0.25 red pepper chopped
- 3 sprigs fresh parsley more for garnish if desired
- 0.25 cup soaked almonds soaked at least 4 hrs; can soak overnight
- 1 teaspoon salt
- 2 cups water
- 2 cups whole kernel corn
Instructions
- Begin processing all ingredients, except for corn, in a heavy duty blender or food processor. Add corn ½ cup at a time, processing after each ½ cup is added. Blend until desired consistency, pour into bowls and serve. May be served warm. (Recipe♦299)
