Claudia’s Raw Corn Soup

Ingredients
  

  • 1 clove garlic
  • 0.5 cup chopped red onion
  • 2 carrots chopped
  • 2 celery stalks chopped
  • 3 parsnips chopped
  • 0.5 cup chopped jicama
  • 0.25 red pepper chopped
  • 3 sprigs fresh parsley more for garnish if desired
  • 0.25 cup soaked almonds soaked at least 4 hrs; can soak overnight
  • 1 teaspoon salt
  • 2 cups water
  • 2 cups whole kernel corn

Instructions
 

  • Begin processing all ingredients, except for corn, in a heavy duty blender or food processor. Add corn ½ cup at a time, processing after each ½ cup is added. Blend until desired consistency, pour into bowls and serve. May be served warm. (Recipe♦299)
