Cleansing Cauliflower Chard Stew

Servings 8 Servings

Ingredients
  

  • 1 onion thinly sliced
  • 0.5 teaspoon sea salt
  • high quality oil to coat bottom of pot
  • 3 cloves garlic minced
  • 0.5 teaspoon smoked sweet paprika
  • 1 tablespoon mixed italian seasonings
  • 1 bunch Swiss chard stems chopped and leaves torn
  • 1 head cauliflower cut into bite-size pieces
  • 0.5 bunch kale chopped
  • 0.25 head cabbage shredded
  • 2 quarts broth
  • 1 dash fresh lemon juice or vinegar
  • 1 cooked, shredded Bell and Evans chicken for meat eaters

Instructions
 

  • Over medium heat, in a large soup pot, with oil to coat the bottom of the pan, cook the onion, salt and garlic, until it starts to color. Add the paprika, seasonings and chard stems, and stir fry for a minute.  Add the rest of the vegetables, broth, and lemon juice/vinegar. Bring to a simmer, add the chicken and add some water to thin out the stew, if desired. Turn off the heat, ladle the stew into bowls, and enjoy.  (Recipe♦301)
