Coconut Almond Balls

Have you tried cacao nibs? A crunchy, rich whole food alternative to chocolate!

Ingredients
  

  • 0.333333 cup creamy almond butter check for preservative-free sugar-free
  • 0.25 cup melted coconut oil
  • 1 tablespoon cacao nibs
  • 0.25 teaspoon vanilla
  • 0.25 cup finely shredded unsweetened coconut

Instructions
 

  • In a medium bowl, combine almond butter, coconut oil, cacao nibs, and vanilla. Mix well. Cover and refrigerate 30-40 minutes or until firm enough to handle. Place coconut in a small dish. Using a 1 tablespoon measuring spoon, scoop the mixture into 8 portions and drop onto the coconut. Working quickly, roll into balls. Refrigerate for 10 minutes before eating.
