Ingredients
  

  • 2 pounds boneless skinless chicken breast
  • 1 can (14 oz) light coconut milk
  • 2 cups fresh basil leaves loosely packed
  • 1 tablespoon ginger, chopped or more to taste
  • 1 jalepeno, chopped or more to taste
  • 3 cloves garlic, minced
  • 2 limes, juiced
  • 1 teaspoon tumeric
  • 1 teaspoon cumin
  • 1 teaspoon curry powder
  • 1 teaspoon salt
  • 0.5 teaspoon pepper
  • 0.5 teaspoon cinnamon

Instructions
 

  • Add the coconut milk, basil, ginger, jalapeno, garlic, lime juice, turmeric, cumin, curry powder, salt, pepper, and cinnamon to a blender. Blend until combined and set aside.Add the chicken to the slow cooker. Pour the sauce on top. Cook for 4 hours or until chicken is cooked through and tender.  (Recipe♦303)
