Cranberry Sauce with Dates

Ingredients
- 2 cups fresh cranberries
- 1 cup pitted dates (medjool if available/affordable)
- 0.5 cup water may need more water to pot as it evaporates
- 2 tablespoons fresh lemon juice
- 0.5 teaspoon cinnamon
- 0.125 teaspoon salt
Instructions
- Soak dates in warm water for 10 minutes, then drain and chop.Stir all ingredients together in a saucepan over low heat.Bring to a simmer, and cook for a few minutes, stirring frequently, until the cranberries pop and the sauce thickens.You can use a fork or potato masher to break up the chunks. It's not necessary, it's a personal preference for chunky or smooth. You can also blend it.Adding water and cooking down adds sweetness.
