Cucumber Salad

Ingredients
  

  • 1 cup freshly squeezed orange juice
  • 4 large cucumbers roughly chopped
  • 0.25 cup olive oil
  • 1 bunch fresh mint torn or chopped
  • salt and pepper to taste

Instructions
 

  • Simmer orange juice until reduced to ¼ cup, then let cool slightly. Toss cucumber slices with juice, oil, and mint. Add salt and pepper to taste, if desired.  (Recipe♦339)

Notes

You can substitute 4 baby cucumbers for each large one.
